AAROn lirette, EXECUTIVE CHEF

Aaron Lirette is the Executive Chef of St. Jane Chicago and Free Rein, the contemporary American brasserie adjacent to the hotel. He oversees all food and beverage concepts for the hotel and restaurant including in-room dining, banquets and catering. Chicago born and raised, Lirette grew up with a curiosity for cooking that was encouraged by his mother, who gave him his first cookbook when he was six years old. His official career in the kitchen began at the age of 17, where he worked his way up at notable Chicago restaurants including Amano, MK, and Duchamp, among others.

Lirette accepted his first role as Executive Chef at Duchamp in Chicago. After leaving Duchamp, Lirette spent time at Celeste and award-winning Acadia, which holds two-Michelin stars, five-diamonds from AAA, and four-stars from the Chicago Tribune. In 2015 he joined Union Square Hospitality with the opening of GreenRiver, where he lead the team to one-Michelin star, four-stars from Crain’s Chicago Business, and three-stars from the Chicago Tribune. Lirette’s love for visiting the local farmers market and meeting new farmers and vendors to discover unique and seasonal ingredients is evident in his cuisine. His passion for creating distinct, quality food with locally-sourced ingredients carries through on his menus at St. Jane and Free Rein.
